Sugar cane is grown primarily for the juice which is extracted and then fermented to make "aguardiente," a type of rum (see aguardiente). The extraction methods vary. The one shown here is the simplest! Victor (far right) is a naturalist-guide for an ecotour company based in Iquitos.
